Celeriac & Carrots

¾ cup water
1 tablespoon olive oil
2 tablespoons fresh lemon juice
1 tablespoon sugar
½ teaspoon salt
3 carrots, thinly sliced
1 large celeriac, peeled and cut into julienne slices

In medium saucepan, combine water, oil, lemon juice, sugar and salt. Bring to a boil. Add carrots and simmer for 3 minutes. Gently stir in celeriac. Makes sure the vegetables are well coated. Cover and simmer for 10 to 12 minutes. (If a thicker sauce is desired, mix a little water with potato starch and stir into the pot, as you would to make gravy. Continue heating until sauce is thick.)

Serves 4 to 6.
