Celeriac & Apple Mash
1 large apple, peeled and quartered
1 large celeriac, peeled and quartered
1 large potato, peeled and quartered
3 tablespoons double cream
1 ounce unsalted butter
Salt and freshly ground black pepper
Boil the celeriac and potatoes in salted water until tender. In a separate saucepan, cook down the apple with a little water until it becomes lumpy. Drain the celeriac and potatoes and mix with the apples. Pass through a ricer (or mash with a conventional masher). Add the cream, butter and seasonings and mix well.
