Sesame Lemon Carrots

2 teaspoons sesame seeds
2 teaspoons butter
2 cups sliced carrots
juice of 1 lemon
1 1/2 teaspoons honey
salt to taste

Toast sesame seeds in a dry skillet until golden brown; set aside.

Heat butter in a medium saucepan. Add carrots and cook over medium heat for 5 minutes, stirring occasionally. Meanwhile, mix the lemon juice and honey together in a small bowl. Pour the lemon-honey mixture over the carrots and continue to cook, stirring, until carrots are tender. Sprinkle with salt and toss with toasted sesame seeds.
