Harvest Sauté

Here’s a quick and easy way to use an assortment of veggies and herbs from this week’s harvest such as:

eggplant
carrots
leeks or sweet onions
sweet peppers
tomatoes
parsley and/or thyme

Slice or coarsely chop your choice of vegetables (proportions are up to you). In a skillet, add olive oil, garlic and onion. Sauté for 3 minutes and then add vegetables and herbs. Sauté until tender.

Serve as a side dish or toss with warm pasta and top with cheese.
