From the "Kids' Corner" - Mashed Potatoes & Carrots
2 medium potatoes, peeled, cut into 1-inch pieces
4 medium carrots, peeled, cut into 1/2-inch pieces
3 tablespoons milk
1 tablespoon butter
1/2 teaspoon salt
1/4 teaspoon grated nutmeg
Cook potatoes with carrots in 1 inch of lightly salted boiling water for 10 minutes or until tender. Drain. Separate carrots and potatoes. Place carrots in a bowl and beat with electric mixer until smooth. Add potatoes and continue to beat until blended. Beat in milk, butter and seasonings.
Serves 4.
