Carrot Casserole

4 cups sliced carrots
1 tablespoon finely chopped onion
1/2 cup grated cheddar cheese
2 tablespoons mayonnaise
10 salted cracker, crumbled
Black pepper

Preheat oven to 350 degrees F. Boil carrots until tender. Drain well and mash with a potato masher. Add remaining ingredients and mix well. Place in a greased baking dish and bake for 20 to 25 minutes.

Serves 4.
