Lite & Creamy Cole Slaw

This light version of traditional slaw has only 2 grams of fat and 83 calories per serving.

1/4 cup light sour cream
2 teaspoons sugar
2 teaspoons cider vinegar
1/2 teaspoon Dijon mustard
Pepper, to taste
3 cups thinly sliced or shredded cabbage
1 green onion, thinly sliced

In a bowl, whisk together the sour cream, sugar, vinegar, mustard and pepper. Add the cabbage and green onions and toss well. Chill for at least 30 minutes. Just before serving, toss the slaw again.

Serves 2.
