From the "Kids' Corner" - Sweet & Sour Cabbage

Thanks to Illinois Benedictine University Dietetic Intern, Sarah McNicholas for sharing this recipe. Sara says: “This recipe combines so many sweet and flavorful foods kids are bound to love it!”

1 red or white cabbage
2 apples
1 tablespoon butter
1/2 cup wine vinegar
1/4 cup honey
1 teaspoon salt

Shred the cabbage. Core and dice the apples. Melt the butter in a large nonstick skillet. Stir in the vinegar, honey and salt. Add cabbage and apples; toss well. Reduce heat to low, cover and simmer 45 to 50 minutes.

(To microwave: place the shredded cabbage in a 3-quart microwave-safe baking dish. Add apples, butter and vinegar. Cover and cook on high 15 minutes. Stir in honey and salt. Cover and cook on high 10 minutes more.)

Serves 4 to 6.
