From the "Kids' Corner" - Lime “Jell-O” Cabbage Salad

Thanks to Benedictine University Dietetic Intern Jennifer Klotz for sharing this recipe. Jennifer says: "The shredded cabbage and carrots give this “Jell-O” a fun crunch when eating it and is a great way to get kids to eat their vegetables. The…[salad]...is very bright and makes a refreshing addition to any meal. This recipe is [also] easy to make and fun to have your kids help prepare. Enjoy!"

1 cup cabbage, shredded very fine
1/2 cup carrots, grated
1 cup crushed pineapple in juice, drained and juice reserved
1 cup water
1 3-ounce box lime “Jell-O” gelatin

Combine grated cabbage, grated carrots and drained pineapple and place in an 8 x 8-inch square dish. Set aside. Add ice to the reserved pineapple juice so it will equal exactly one cup. Set aside. In a small pan over low heat, heat one cup water. Dissolve “Jell-O” in the hot water and turn off heat. Add the pineapple juice/ice to the pan and stir until ice melts. Pour “Jell-O” mixture over the cabbage, carrots and pineapple. Refrigerate for 2 hours or until firm. Cut into 9 squares to serve.

Serves 9.
