From the "Kids' Corner" - Coleslaw with Apples

Thanks to Benedictine University Dietetic Intern Michelle Coyle for sharing this recipe. The lemony dressing and sweet apple flavors make this slaw especially appetizing to kids.

1/2 cup low-fat lemon yogurt
2 tablespoons cider vinegar,
1 tablespoon light mayonnaise
1/4 teaspoon each: salt, ground pepper
4 cups thinly sliced or shredded green and/or red cabbage
1 Golden Delicious apple, cut in thin wedges

In a medium bowl, whisk together the yogurt, vinegar, mayonnaise, salt and pepper. Add the cabbage and apple and toss to coat.

Serves 4.
