From the "Kids' Corner" - Braised Chinese Cabbage

Thanks to Benedictine University Dietetic Intern Nazia Sadat for sharing this recipe. Nadia says: “Here's a delicious way to enjoy Chinese cabbage, and it's great with pork, steaks, or other meat dishes.”

1 head Chinese cabbage
2/3 cup chicken broth
1/2 teaspoon onion powder
1 teaspoon Creole seasoning
1 tablespoon lemon juice
salt and pepper, to taste

Cut bottom from the Chinese cabbage and discard. Slice into strips, discarding hard core pieces. Put in a saucepan with about 1/2 cup of chicken broth, onion powder, and Creole seasoning. Cover and simmer for about 10 minutes, or until tender. Remove cover and add lemon juice; continue to simmer for 5 to 10 minutes, until chicken broth has reduced to about 1/4 cup. Taste and add salt and pepper, as needed.

Serves 4.
