From the "Kids' Corner" - Apple & Carrot Slaw
This is a simple, colorful, nutritious slaw the kids are sure to like!
1 medium cabbage, shredded (about 4 cups)
1 3/4 cups shredded carrots
1 3/4 cups chopped unpeeled red apple
2/3 cup fat-free mayonnaise
2 tablespoons sugar
1/3 cup white wine vinegar
1 teaspoon celery seed
Combine cabbage, carrots and apple in a large bowl. Mix the mayonnaise with the remaining ingredients. Pour over cabbage mixture and toss gently to coat. Cover and chill 45 minutes or more before serving.
Serves 6 to 8.
