Confetti Rice Salad

Color and crunch entice kids to eat vitamin-rich fruits and veggies. Try this salad as a side for grilled hamburgers or chicken breasts.

1 cup cold cooked rice
1 cup shredded red or green cabbage
1/2 cup chopped tomato
1/4 cup dried tart cherries
2 tablespoons chopped honey-roasted peanuts
1 tablespoon sliced green onion (optional)
1/4 cup bottled low-fat sweet and spicy French salad dressing

In a medium bowl, combine rice, cabbage, tomato, cherries, peanuts and, if desired, green onion. Toss to mix. Drizzle with salad dressing and gently stir to coat evenly.

Serves 4.
