Cabbage Slaw with Lemon, Pepper & Parmesan
This cabbage slaw was one of entertainer Danny Kaye’s favorites
from Gene & Georgetti’s (the popular Chicago restaurant) years ago.
1/2 large head green cabbage, cored, thinly sliced, chilled
3 tablespoons olive oil
1 teaspoon lemon zest
2 tablespoons fresh lemon juice
1/2 cup freshly grated imported Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon coarsely ground pepper
Put cabbage in large bowl; set aside. Combine oil, zest, lemon juice, cheese salt and pepper in separate bowl. Add to cabbage and toss well.
Serves 4.
