Cabbage Pie

This is even great cold the next day!

1 large cabbage
1/2 to 1 pound fresh mushrooms
1 8-ounce package cream cheese
Dash of tamari soy sauce
2 unbaked pie crusts

Cut up the cabbage and lightly steam. Sauté the mushrooms just enough to get some of the moisture off. Place 1/4-inch wedges of cream cheese on the bottom of one unbaked pie crust. Layer about 1/2-inch of cabbage on top of cream cheese. Place a similar layer of mushrooms on top of cabbage. Sprinkle with salt, pepper and a dash of tamari. Continue to layer in this manner until your pie crust is very full (can be filled above the top). Place second pie crust on top, seal the edges and vent the top. Bake at 350 degrees F. for about 50 minutes.
