Cabbage & Pepper Slaw

This is something I make all the time, but never exactly the same twice. Experiment to find the proportions of ingredients that suit your own taste; variations do not ruin the dish...just be sure to get the dressing adjusted to your taste before adding it to the vegetables.

Combine:
Shredded cabbage (any color)
Sweet peppers, julienned (any color)
Chopped jalapeno or other hot pepper

Add grated carrot, if desired.

Make a dressing with:
Olive oil
Fresh lime juice
A dash of sugar
A touch of ground cumin
Finely minced garlic
Salt and pepper to taste

Toss dressing with vegetables and let marinate at least 1 hour before serving.
Serve room temperature or chilled.
