Cabbage in a Creamy Sauce

If your kids hate cabbage, have them try this creamy version. The recipe is intended for green cabbage, but it will also work with red cabbage. Thanks to Jessica Colletta, Illinois Benedictine University Dietetic Intern, for sharing this recipe!

1 1/2 pounds cabbage
Grated nutmeg, to taste
4 ounces nuts of choice
6 ounces cheddar cheese

3 ounces butter
4 tablespoons all-purpose flour
1 pint milk
Salt and pepper

Shred the cabbage and steam until tender. Season to taste with grated nutmeg. Meanwhile, melt the butter in a pan, stir in the flour and cook for 2 minutes. Gradually add the milk, stirring continuously until the sauce thickens. Season with salt and pepper and simmer gently for 5 minutes. Grease a large baking dish and make alternating layers of cabbage, white sauce, nuts and grated cheese. Bake for 15 minutes in a 425 degree F. oven.

Serves 4.
