From the "Kids' Corner" - Brussels Sprout Soup

This soup is wonderful on a cold evening. It’s fast and tasty...even to those who hate Brussels Sprouts!

1 large Kielbasa, cut into 1-inch thick rounds (or other favorite sausage)
1 medium onion, cubed
1 large potato, cubed
10 to 12 ounces Brussels sprouts
1 can chicken stock*

Sauté the onion, potato and Kielbasa in a little bit of oil, add the chicken stock and simmer until potato is tender. Save several whole Brussels sprouts and cut them in half. Chop the rest of the sprouts in the food processor into small bits.

Add the chopped and whole sprouts to the soup and cook until the whole Brussels sprouts are just tender.

Serves 4.

*Editor's note: This recipe does not specify can size, so start with a 14 1/2-ounce can, but have another on hand in case it's not enough.
