Brussels sprouts

From the "Kids' Corner" - Brussels Sprout & Carrot Hash

It is the rare child indeed who likes Brussels sprouts, but kids may try them mixed with other veggies.

1/2 tablespoon olive oil
3/4 cups chopped onion
1 clove garlic, finely chopped
1/2 pound Brussels sprouts, trimmed and finely chopped
1 medium carrot, finely chopped
1/8 teaspoon dried thyme
1/3 cup water
1/2 red bell pepper, seeded and finely chopped
Salt and pepper, to taste

Heat oil in skillet over medium heat. Add onions and garlic; cook, stirring, for 5 minutes. Do not brown. Add sprouts, carrots, thyme and water; simmer over low heat 5 to 10 minutes, until water has evaporated. Add bell pepper, salt and pepper. Sauté 1 minute more.

Serves 2.
