Brussels sprouts

Brussels Sprouts with Bacon & Cheddar

1 1/2 slices diced bacon
1/2 pound fresh Brussels sprouts, cut in half
1/2 medium onion, cut in wedges
1/8 cup water
Freshly ground pepper to taste
1/4 cup shredded cheddar cheese

Preheat oven to 450 degrees F. Fry bacon in a small skillet until crisp; remove bacon; reserve drippings. Add Brussels sprouts and onion to the pan; stir-fry over medium high heat for 5 minutes, stirring constantly. Add water; cover, reduce heat to low and cook 5 minutes. Remove from heat; stir in bacon and pepper. Spoon into a lightly greased oven-safe dish; sprinkle with cheese. Place in oven and bake until cheese melts.

Serves 2.
