Brussels Sprouts, Celery & Blackberry Salad
Proportion of ingredients to taste:
Brussels sprouts, cooked, chilled, and cut in half
Chopped celery
Fresh blackberries, washed
Mixed green lettuces
Dijon vinaigrette salad dressing
Place lettuce in plate. In the center arrange the Brussels sprouts. Mix the celery and blackberries and place around the Brussels sprouts. Drizzle
vinaigrette over top and serve.
(To make vinaigrette: Mix 1/2 teaspoon Dijon mustard, 1/2 teaspoon salt, 1/4 teaspoon pepper and 2 tablespoons red wine vinegar. Slowly add 5 tablespoons olive oil [or to taste], while whisking constantly.)
