Pasta with Broccoli

Posted by Carole Koch

1 head broccoli, florets and stem cut into bite-sized pieces
1/2 pound pasta of choice
2 tablespoons olive oil
2 tablespoons butter
1 garlic clove, minced
1/2 pound mushrooms (whole, halved or sliced)
1/4 cup grated Parmesan cheese

Cook broccoli in boiling water 2 to 3 minutes. Remove with slotted spoon. Cook pasta in same water. Meanwhile, heat olive oil and butter in skillet. Sauté garlic and mushrooms 3 to 4 minutes. Stir in drained broccoli. Drain pasta and toss with broccoli mixture and cheese.

Serves 2 to 4.
