From the "Kid's Corner" - Trees In A Broccoli Forest

Posted by Carole Koch

1 carrot, peeled
1 1/2 cups broccoli florets
2 cherry tomatoes
1 1/2 tablespoons parsley leaves
1/8 cup plain nonfat yogurt
1/8 cup light sour cream
1 teaspoons honey
1 teaspoons spicy brown mustard

Hold carrot against cutting board and trim off ends. Cut in half, crosswise, then lengthwise to make four pieces. Combine yogurt, sour cream, honey, and mustard in a small bowl. Put two carrot pieces side-by-side in the center of a plate. Arrange broccoli around the carrots forming a cluster. Place the tomato at the top of the plate. Spoon dip around the base of carrots and sprinkle with parsley.

Serves 2.
