From the "Kids' Corner" - Easy Broccoli (or Cauliflower) & Mushroom Quesadilla

Thanks to Benedictine University Dietetic Intern Adina Gubbels for sharing this recipe. This recipe will also work with cauliflower.

1 medium onion, chopped
1 cup fresh mushrooms, sliced
2 cloves garlic, minced
1 tablespoon dried parsley, oregano and basil
2 tablespoons butter
8 low-fat flour tortillas
2 cups cooked broccoli (or cauliflower), chopped
2 cups grated mild cheddar cheese

Preheat oven to 350 degrees F. Sauté the onion, mushrooms, garlic and herbs in butter over medium heat until lightly browned, about 10 minutes. Combine with broccoli. Spoon the mixture over 4 tortillas that have been placed on a lightly greased cookie sheet. Cover with 4 remaining tortillas. Bake until cheese melts, about 10 minutes. Cut into wedges to serve.

Serves 4.
