From the "Kids' Corner" - Broccoli & Cheese Casserole

Claire says: “This is very easy to prepare and impossible to turn down, even if you think you don’t like broccoli! This recipe is a combination of several recipes…simplified for a quick and easy meal that the kids can help prepare!”

1 medium onion, chopped
¼ cup butter or margarine
1 pound fresh broccoli
2 cans cream of mushroom soup
¼-½ cup cheddar cheese, shredded

Sauté onions in butter in a small skillet until translucent over medium heat, three to five minutes. Combine all ingredients into an oven-safe casserole dish, sprinkling the cheese on top. Bake uncovered for 30 minutes in a preheated 350 degrees F. oven.

Serves 6.
