Bok Choy

Easy Bok Choy Salad with Asian Vinaigrette

Dressing:
1/2 cup water
1/4 cup sugar
Juice of 1 lemon
3 tablespoons soy sauce
1/3 cup olive oil

Salad:
1 medium to large head bok choy, cut into bite-sized pieces
1 bunch green onions, chopped
½ cup slivered almonds
5-ounces of chow mein noodles

Combine the water and sugar in a saucepan. Bring to boil, reduce heat, and cook 3 minutes, stirring constantly. Remove from heat and add the lemon juice, soy sauce and oil. Cool. Keep in the refrigerator until ready to dress salad.

In a large bowl, combine the bok choy, green onions, almonds and chow mein noodles. Toss with dressing and serve immediately.
