Roasted Beets with Lemon & Garlic

1 pound beets, peeled, 1/4-inch slices
4 cloves garlic, thinly sliced
2 tablespoons lemon juice
1/4 teaspoon lemon zest
1/2 teaspoon extra virgin olive oil
1/4 teaspoon sugar
1 pinch each, salt and pepper

Toss all ingredients together in an 8-inch square glass baking dish. Place a piece of oiled parchment paper on top of beets and then cover tightly with tin foil. Roast at 375 degrees F. for 40 minutes, shaking pan occasionally to prevent sticking. Serves 4.
