Roasted Beets

A simple and flavorful way to prepare beets is by roasting them. They make a wonderful side dish for any grilled or roast meat or chicken, as well as breaded sautéed veal.

Wash and trim beets and then cut into halves or quarters. Place on a large baking pan and toss with a bit of olive oil, salt and black pepper, to taste. Roast in a 425-degree F. oven until tender and browned, about 1 to 1 1/2 hours. When cool enough to handle, remove skins. Serve plain or top with butter. Garnish with sliced scallions.
