Raw Beet Salad with Garlic Scapes

2 or 3 small or medium beets, trimmed, peeled, sliced into match-sticks
1 garlic scape, sliced
1/8 cup feta cheese
2 or 3 basil leaves, chopped
1 1/2 teaspoons extra-virgin olive oil
1 1/2 teaspoon apple cider vinegar
1/2 teaspoon Dijon mustard
salt and pepper, to taste
Whisk together the oil, vinegar, and mustard. Season with a pinch of salt and pepper.
Combine beets, garlic scapes and feta cheese. Drizzle with dressing and toss. Sprinkle basil over the top to serve.
Serves 1 or 2.
