Raw Beet Salad

Raw beets
Raw carrots
Vinaigrette dressing
Chopped fresh parsley
Honey (optional)

Scrub beets and carrots and then grate equal amounts of each (or what ever proportion you have on hand). Toss in your favorite vinaigrette dressing, to taste. Sprinkle with a bit of parsley. If desired, add a touch of honey for additional sweetness. Chill.
