Orange-Rosemary Beets

(Recipe may be easily multiplied.)

4 ounces beets
1/4 teaspoon grated orange rind
2 tablespoons orange juice
Pinch dried rosemary

Steam, boil or roast beets and then cut into quarters or eighths. Place in a small bowl and add remaining ingredients. Mix well. Serve warm or cold.
