From the "Kids' Corner" - “Beet-u-tiful” Smoothie

Posted by Carole Koch

Thanks to Illinois Benedictine University Dietetic Intern Lauren Brett for sharing this recipe! Lauren says: “The grape juice is a great cover up for the broccoli and beets. Have kids help put fruits and veggies in blender and push the button to watch their smoothie in the making!”

½ cup almond milk
Splash of grape juice
¼ cup cooked broccoli, cooled
¼ cup cooked beets, cooled
Handful of frozen strawberries

Cut vegetables into small pieces. Place everything in the blender and blend until smooth.

Serves 1.
