From the "Kids' Corner" - Beet “Fries”

Preheat oven to 375 degrees F. Peel beets (or scrub them really well and leave the skin on) and then cut into French-fry-like sticks. If you’re using potatoes too, wash and dry but don’t peel, and cut into sticks. Thinly slice some green onions. Place beets, potatoes and onions in a bowl and toss with olive oil to coat. Spread out on a baking sheet lined with parchment paper (for easy cleaning). Sprinkle liberally with salt and bake for 45 minutes, scooping and turning with a spatula once during cooking time, until browned on the outside and soft in the middle. Transfer to a platter and serve while still hot.
