Easy Beet & Carrot Salad with Apple

1 large or 2 small beets, peeled and grated
6 medium carrots, grated
1 to 2 apples, cored and grated
3 to 5 tablespoons lemon or lime juice
3 to 5 tablespoons honey

Optional additions: dried cranberries, raisins, coconut, grated ginger, toasted sunflower seeds, sesame seeds, pecans, walnuts, or orange sections.

Mix beets, carrots and apples in a bowl. Add one (or more) of the optional ingredients, to taste. Mix together juice and honey; add to beet mixture, stir and serve.

Serves 4 to 6.
