Beet & Horseradish Relish

Fresh horseradish root
1/2 cup sour cream
1 pound cooked, chopped beets
1 teaspoon sugar

Scrape and wash horseradish root and grate desired amount into sour cream and let stand 2 hours. Blend cooked beets, 1 tablespoon additional grated horseradish and sugar until beets are coarsely chopped. Mix in sour cream mixture. Cover and refrigerate for several days to blend flavors.

Makes 3 to 4 servings.
